Farm Fresh Garlic Scape Butter
Our garlic won’t be ready to harvest for several weeks, but we don’t have to wait around for the delicious taste of fresh garlic, thanks to the scapes we just harvested. They give any dish a fresh, summery feel and are very versatile. Recently, we’ve been enjoying this simple yet flavorful compound butter.
What is a garlic scape?
A garlic scape is the curly stem that grows from the bulb of a hardneck garlic plant. For tips on how to harvest and prepare them, see our recipe for Farm Fresh Garlic Scape Pesto.
For this recipe, you’ll only need three simple ingredients: softened butter, garlic scapes, and fresh basil leaves.
First, place the garlic scapes and basil leaves into a food processor and pulse until the contents look like fine granules, but be careful not to over-process them as this will turn it into a paste.
Next, combine the softened butter and scape mixture in a bowl and cream them together with an electric beater. Beat on high for an extra minute or two if you enjoy a whipped texture.
And voila! We’ve enjoyed this delicious butter spread generously over homemade ciabatta bread…
…used it to make a grilled cheese sandwich…
…and over steak and roasted herb potatoes. There are endless possibilities of deliciousness!
Farm Fresh Garlic Scape Butter
Ingredients
- 1 cup salted butter
- 1/4 cup rough chopped garlic scapes
- 3-4 fresh basil leaves
Instructions
- In a food processor, combine garlic scapes and basil leaves. Pulse a few times until the scapes look like fine granules. Be careful not to over-process, as this will turn them into a paste.
- In a medium-sized bowl, combine butter and scape mixture. With an electric beater, cream together on medium speed until combined. Increase speed to high for about one minute to whip the butter mixture.
- Transfer to a serving bowl and enjoy!
